Detroit-style pizza joint opens in Denver serving classic “red tops” – The Denver Post
The restaurant: Red Tops Rendezvous; 2917 W. 25th Ave., Denver
About: This Detroit-style pizza and Italian joint in Jefferson Park is a passion project by Culinary Creative founding partner and Michigan native Kevin Eddy. It’s an ode to Eddy’s hometown, where he grew up eating rectangular pizza with a thick, crispy crust, and covered in marinara, also known as “redtops” in Detroit.
Menu: Red Tops is serving Eddy’s classic version of a Detroit-style pizza, as well as specialty thick crusts, like the Brick and Morty with a brick cheese blend, mortadella, roasted balsamic onions, whipped ricotta, chile honey and arugula. There are also other classic Italian entrees, including shrimp scampi or chicken parm.
Who’s cooking: Alan Youngerman, formerly the head chef at Cart-Driver and most recently Bar Dough, is the executive chef.
More: This is the first restaurant that Culinary Creative — the restaurant group behind Mr. Oso, Highland Tap & Burger, A5 Steakhouse, Ash’kara and others — has built from the ground up. The two-story space includes a rooftop bar and a mural by local visual artist Olive Moya, featuring Detroit’s famed Fisher Building. The decor is influenced by Detroit history, with industrial touches throughout the space, and Eddy brought in his own vinyl collection.
